LATIN FLAVORS

LOCAL GOODNESS

There is always room in the community, especially north of the Ferry Street Bridge, for an ingredient driven restaurant like Novo. This Modern Latin Table, with an emphasis on foods from Spain, Mexico, Peru and beyond, sets itself apart with its modern urban interior and hip use of local products united with unpretentious Latin home cooking.

Located in one of Eugene's favorite outdoor settings on the Courtyard at Oakway Center, Novo captures the gestalt and intent of the place. The tone is set by the meticulously designed mid-century modern space, which incorporates reclaimed vertical grain fir paneling, concrete block, steel, open ceilings accented with wood arbors, vintage warm lighting and paintings by former Eugene native, Los Angeles artist, Marshall Roeman. Its exhibition kitchen bar allows you to dine front row and center amid the action and the state of the art sound system only adds to the collective energy of the space. During the warm months you can dine under the stars on the open-air patio with gaslights enchanting the festive community and neighborhood atmosphere.

founding chef ALEJANDRO CRUZ

Chef Alejandro Cruz, our founding chef, learned his way around the kitchen at places like Membrillo, Soubise, Rabbit and Marche. His approach was to treat Latin America as if it were an extension of the Northwest.  This two-time Eugene Iron Chef winner and now 2019 James Beard National semi-finalist, for his creations while at Novo, used the same exacting standards he learned while working at these award winning Eugene restaurants combined with the acclaimed gastronomic traditions of his native city Oaxaca, Mexico. Using the freshest ingredients, Alejandro set the path by created earthy modern interpretations  of dishes from Latin America and Spain without compromising the foundational roots of Latin cooking.

Last spring, Chef Alejandro passed the torch to his young protege, Chef Aaron Shapiro, while he takes a break from the demands  of restaurant business to spend more time with his young family.

Staying true to the foundation that was set by Alejandro, Chef Aaron has not missed a beat. Training under the tutelage of Chef Alejandro and other accomplished chefs from places such as King Estates Winery, Aaron has brought a focus and attention to detail that is unique for someone his age. His love of food, cooking and his playful curiosity is evident in every dish.

Their drinks show layers of flavors appearing with each sip, yet artfully subdues the novelty factor. Novo's cocktails are so refreshing and easy to drink, you'll crave another one.
